There's a few tricks to keep the carbs low and the flavor excellent. When you're cooking with very few ingredients, make sure each one is high quality. I use block mozzarella cheese rather than string cheese that comes individually sealed. Its higher in moisture content and melts more thoroughly for an experience that's slightly more melty than stringy when you break them apart.
For the breading try and find a brand of ground Parmesan with no preservatives or cellulose. 4C brand is particularly delicious and easily found in Walmart. Its not refrigerated and kept next to the pasta sauces and pizza crust.Andrew & Everett is another brand. If your grocery store has a relatively good cheese section sometimes the store brand ground Parmesan will be additive free. I wouldn't grind your own for this one as the extra moisture will prevent the cheese sticks from setting up solid.
If you want to make these ahead of time, get to the breading stage, freeze the sticks and let them stay in the freezer for at least an hour until the breading is fully frozen then place in a ziplock bag. You can fry them from the frozen state just add a few extra seconds per side. If you want to fry them all at one time, fry them after 20 minutes in the freezer then freeze solid on a cookie sheet and then add to a ziplock bag. Bake at 400 degrees for around 15 minutes. The nutrition information for this doesn't include the oil for frying as figuring out how much remains on the food is very difficult. It would increase the calories but not the carbs. Use a good quality fat like light olive oil, or a rendered animal fat like lard.

Mozzarella Cheese sticks

ingredients:
1 lb of mozzarella cheese
6 oz grated Parmesan cheese
2 eggs, whisked
2 tsp oregano
Heat stable oil for frying (enough to be about 2" deep in the pan of your choice)
instructions:
- Slice the mozzarella log into 0.5 X 4" sticks.
- Add whisked eggs to a shallow pan. Add the grated Parmesan to another shallow pan with the oregano
- First dip the mozzarella stick into the eggs then then into the Parmesan mixture. Repeat each step, breading each mozzarella stick twice.
- Chill the coated mozzarella sticks in the freezer for at least 20 minutes. If you want you can leave them in the freeze until frozen solid and then bag and keep frozen to fry for quick dinners. Otherwise remove after 20 minutes.
- Fry in small batches on medium heat for about 1 full minute per side.Drain on paper towels for a few seconds and serve with low carb marinara of your choice.
